FLAVOR INSPIRATIONS FROM NORTHEASTERN BRAZIL
Brazil is home to one of the most diverse populations in the world. From the indigenous tribes who first settled here to the Portuguese, Africans, Germans, Italians and Japanese who have all come to live in this country, each of these groups has influenced the rich food culture of Brazil.
Despite all these cultural influences, the Northeast region of Brazil remains predominantly representative of the native tribes and earliest settlers of the area, being the Amerindian, Portuguese and Africans. Here you will find heavy use of fruits, beans and rice to create classic dishes such as queijo coalho (roasted cheese skewers) pamonha (Brazilian tamale) and the national drink of Brazil, caipirinha.

Cuban cuisine represents a blend of Spanish, African and Caribbean influences with just a dash of Chinese that will entice your taste buds with fresh root vegetables, bright tropical fruits and savory meats.
One of the most widely known dishes, the Cuban sandwich, is said to have originated with the native Taino tribe but has since adapted unique variations including the combination of pork and ham. While Cuban cuisine uses many common ingredients, the combination of flavors and spices result in dishes that are simple, yet robust in flavor.

The ingredients and cooking styles used in Southern Alabama’s cuisine reveals a glimpse into the history of this region. While the native population of Alabama has significantly declined, their influence lives on in the cooking techniques we see today, such as barbecuing meat. The influx of African slaves has also led Southerners to adapt many ingredients indicative of Africa including okra, sesame, peanuts and black-eyed peas.
The cuisine we see in Alabama today represents the region’s history with a deep appreciation for homegrown foods and traditional cooking techniques. From the simple and savory succotash to the decadent and sweet Chess pie, Alabama is known for a variety of humble yet delicious dishes.
