Pineapple adds a tangy sweetness to this traditional dish.
2 cups (10 to 12 oz.) diced cucumber, peeled and seeded 1/2 cup finely diced red onion2 teaspoons jalapeno pepper, seeded and minced 2 tablespoons lime juice1/2 cup chopped cilantro, divided2 large avocados, diced2 cups DOLE Chef-Ready Cuts Pineapples Cubes, partially thawedSalt and black pepper, to taste
Combine cucumber, red onion, jalapeno pepper, lime juice and half cilantro in bowl. Add avocado and gently stir ingredients together. Add pineapple and season with salt and pepper.
Sprinkle remaining cilantro over guacamole. Serve with tortilla chips.
