1 tablespoon onion powder,
1 tablespoon garlic powder,
1 tablespoon hot pepper sauce,
3/4 cup DOLE® Pineapple Juice,
1 cup DOLE Chef-Ready Cuts Mango Cubes, partially thawed,
1/3 cup black spiced rum,
1/2 cup packed brown sugar,
1/3 cup chicken broth or stock,
1 pound tilapia fillet(s),
2 teaspoons jerk seasoning,
Step 1: Combine onion powder, garlic powder, hot pepper sauce, pineapple juice, mango, rum, brown sugar, and chicken stock in a medium saucepan. Bring the mixture to a boil. Reduce heat; simmer 20 minutes or until sauce is reduced by half.
Step 2: Spray tilapia filets with cooking spray. Rub with jerk seasoning.
Step 3: Pan fry tilapia until fish is opaque and flakes easily, about 4 minutes on each side. Serve fish with sauce.
